This ensures the industry is diverse in terms of location of farms, and the varieties of bananas grown and their flavour. Bananas are a source of dietary fibre, vitamins C & B, potassium and folate.

Caramel Banana Pudding
- 1 tablespoon butter
- 1 cup brown sugar
- 1 egg, well beaten
- 125ml milk
- 1 cup SR flour
- Bananas
Method: Grease a shallow ovenproof dish with extra butter and some extra brown sugar.
Line the dish with sliced bananas.
Cream butter and brown sugar in a bowl. Add egg, beating to combine. Alternate addition of milk and flour, mix well. Spoon into dish over the bananas. Bake at 180c for 30-40 minutes.
Serve with custard or cream.
