Jason Nichols and his partner Michael Filko have opened their Rusty Owl Tapas and Wine Bar on the Bank Corner (opposite IGA) in Gulgong, formerly the Bank Corner Wine and Gelato.
The chef Jason studied his craft at the Darlinghurst TAFE and then went on to the Ryde School of Hotel Management.
The pair also own the M&J Wax store in Gulgong having sold the shop of the same name in Mudgee some time ago.
Jason said it's something he's always wanted to do and jumped at the opportunity.

"We just heard it was up for sale and bought the business. It was the gelato bar and we've changed the name," he said.
"It's along the lines of something I've always wanted to do. I really wanted a pub but I couldn't afford one," Jason laughed.
The bar only recently opened but already has people talking.
"I think we're getting a lot of people actually. We've been open for three weeks now and we're getting a lot of repeat business, a lot," Jason said.
"We're always busy, Friday and Saturday we're always booked out. Wednesday and Thursday is pretty full on too "We're well known for the food as well because everyone seems to be talking about it.
"It's been pretty overwhelming with how busy it's been."

The new tapas bar offers a variety of tapas style food such as crab spring rolls, garlic and chilli prawns, sticky wings, a trio of sliders to name just a few.
Jason said the ambience is relaxing and classy with beautiful red velvet curtains and subdued lighting and candles.
"It's a very laid back, chilled out atmosphere," he said.
"We do cocktails, wines, ordinary beers, craft beers, spirits, we do it all.
"Just come out and chill out."
And for those wondering, yes you can still get ice cream from the gelato bar. Good news considering we're coming into Summer.
The Rusty Owl is open from 11am until late Wednesday to Sunday and the Gelato Bar is open on the same days from 11am to 4pm after that time you can come into the bar and get your gelato there.
"Since opening a few weeks ago the Tapas Bar has been inundated with diners so it is evident the venue is something Gulgong has needed for a long time," Gulgong's Joy Harrison said.
