Lawson Park Hotel’s Stefano Brulando has made the nominees list for ‘Chef of the Year Country’ at the Australian Hotels Association (AHS) of New South Wales excellence awards.
After moving from Italy four years ago, Brulando mastered his craft at Bondi’s famous Iceberg restaurant but jumped at the opportunity to move to Mudgee to experience a different environment.
Since then, Brulando has earned a reputation as one of the best chefs in the region.
Stefano works his magic in the Mudgee kitchen which has also made the cut for the best casual dining venue and best meal under 15 dollars.
In addition to praising his co-workers, Brulando attributes the hotel’s success to the authenticity of its food.
“Everything is made from zero to one hundred,” Brulando said. “Almost all our products are freshly made including our bread.”
Nine other chefs from pubs in country NSW have been selected for the award; Brulando is the only central west chef in the category.
Although winning first prize would be a great feat, Brulando is happy to have made it this far.
“It’s a good achievement for me. I’m happy to have made the nominees list”.
Brulando highlighted his mousse, which is served in a Guinness schooner glass, as one of his best recipes.
He also endorsed his salmon and risotto dish.
The Oriental Hotel also qualified for the best casual dining venue, which rounds out the nominees for Mudgee.
Gulgong’s Prince of Wales Hotel qualified for three separate categories, making it one of the region’s most proficient venues.
The award presentation will be held in Sydney on November 21.
