Orange | Mr Lim's Sammy Jeon will take over Kylie Kwong's Sydney restaurant site

Sammy Jeon will take Mr Lim's unique Korean-Chinese cuisine to Sydney's eastern suburbs from November.

Mr Jeon said he was excited to be taking over the site of the former Billy Kwong restaurant which was run by noted chef Kylie Kwong.

He said the three Orange restaurants would continue to operate. "Orange will be the back-up to Sydney," he said.

Mr Jeon said he was in Sydney this week conducting interviews for chefs to work in Orange in his absence.

He said while he would be concentrating on the new venture in Potts Point he would still be involved in Orange. "I'll be there every week in Orange," he said.

Mr Jeon said it was a "good time" to move into the Sydney market. He said it had a "reasonable rent" with a fully-equipped kitchen and restaurant furniture already set up.

"I'm having good luck taking things over," he said.

The new restaurant will be called Diana, after Diana Shaw who he described as his mentor in food and wine.

"She is always giving me tips. She has always guided me. She's always mentoring me," he said.

Mr Jeon said the new restaurant would follow the Mr Lim style. "I'm very happy about it," he said.

"It's the same thing, we are going to offer a slightly bigger menu. It is easier to get supplies, I can drive to the Fish Markets myself," he said. Mr Jeon said his three Orange restaurants were doing well after surviving the coronavirus lockdown earlier this year.

"Mr Lim has just been crazy," he said.

Mr Jeon said they had moved to an online-only booking system to cope with the demand.

He opened his first Italian restaurant, Avido Ristorante, in Peisley Street last December.

Mr Jeon said it was now doing well with plenty of space to socially-distance customers.

However, he said he was still short of floor staff in Orange.
