Headlining the diverse list of performers is William Crighton of Riverina, who will be on show at both the Kandos Markets and Rylstone Twilight Picnic.
Crighton's live show has been highly regarded on the international stage, having showcased in at Blues Fest, WOMAD and Woodford Folk Festival, Cambridge Folk Festival and Boomtown.
Playing on the banks of the Cudgegong River at Rylstone will be Bathurst's Smith & Jones who will feature their music at the Twilight Picnic after a Welcome to Country and Traditional Smoking Ceremony.
Earlier in the day, Gramphone Man will be performing at Food and Wine Markets in Coomber Park, Kandos.
Meanwhile, Mudgee's Tenielle Jane and Bathurst's Andy Nelson will also be featured in the Fermenta line-up.
Festival curator, Alex Wisser said the eclectic lineup of talent is a perfect fit for the first-time festival.
"What better way to begin a new year with than with a celebration of the very process that we use to celebrate life: fermentation," Mr Wisser said.
"It is through this magical process that we create the food and drink of celebration itself, and to come together after a year of social isolation to share knowledge and understanding of these ancient processes.
"To discover new ways of looking at and thinking about the culture of fermentation seems a fitting way to create a sense of looking forward."
The one day event features a collection of activities with food and wine markets, educational and how-to workshops, finishing with Twilight Picnic in Rylstone.
Local producers will host small group workshops on their field of fermentation including Breakfast with an Alpaca, Wild Stories Foraging Guide, Kombucha Demonstration, How to Make Honey Ginger Beer, Sourdough Crumpets Workshop, Chocolate Fermentation, Kombucha Brewing Workshop, Traditional Sauerkraut Demonstration plus many more.
"The thing about fermentation is that it underpins our relationship to food, to land and to life - it happens in our bodies, in our food and in the soil that makes all life possible," Mr Wisser said.
