Three Tails Brewery and Smokehouse is just about ready to be Mudgee's smokiest new brewery.
"It's not a pub, it's not a restaurant, it's something quite different," said co-owner, Mick Ash.
Three Tails is owned by three business partners that 'all have a tale to tell about Mudgee'. "It's the three of us, hence the name 'Three Tails'," said Ned Kelly.
John and Kerrie Latta are the owners of the popular Nomad Brewing in Sydney, Mick and Deb Ash run a cattle farm in Apple Tree Flat, while Ned Kelly runs Kelly's Irish Pub in Mudgee.
"The idea came about over a few beers, we've all had different connections to Mudgee," said John.
The Brewpub offers 18 craft beers on tap, many of which will be brewed onsite, along with an eclectic mix of international bottled beers, spirits and cocktails. Mudgee's are also be available.
"It's a craft beer bar, it's not going to have the mainstream beers and spirits, it's going to have a real artisan feeling. We will brew on site which will be put together with the slow-cooked Texan barbecue," said Mick.
Food will be slow-cooked Texan barbecue provided by local Mudgee Company Smokin' Bro and Co, using their barbecue smoker that that can cook up to 750kg of meat.
"We want to do something like when you go to Texas and see the barbecue and breweries all in one area, you go all through the US and see brewing pubs, it's always such a big vibe that's linked to the food," said John.
A selection of cheese, meats and other local produce will also available for customers.
Mudgee's original Post Office
The business partners jumped at the chance of taking over Mudgee's original Post Office on Lewis Street when it became available.
The old post office will be the main bar modelled on some of the best barbecue bars in New York. There will also be a fully renovated old corrugated iron shed at the rear of the building which will house a fully functioning brew-kit.
"The whole idea is to give a really nice friendly feel as well, we want to not only cater for locals but everyone else as well," said Mick.
Three Tails will open Wednesday and Thursday evenings, and all day Friday and Sunday.
